Why Chef Michael Dobson delights our Italian restaurant customers

Michael is a graduate of Johnson and Wales College of Culinary Arts.  A premier educational institution, Johnson and Wales says that its graduates won’t just learn to be great chefs, but will learn to change the way the world eats! Michael is a great example of that mantra. He brings Procaccini’s a unique advantage over other family restaurants. Combining experience, training and expertise he is striving to change the family dining experience in Connecticut.

Not only does Michael have excellent training, but he has spent a significant number of years practicing his art.  Working for restaurants like Carbone’s Ristorante, Gaetanos and others he refined his skills and eventually spent time with his own restaurant. Affectionately known as Dobber by his co-workers, he brought his combination of experience and expertise to Procaccini’s over 14 years ago.  In that time he has combined original recipes and his own special interpretation of the arts to create a unique menu for the benefit of patrons from East Hartford and Glastonbury. 

As the chief executive in the kitchen, Michael takes great care in what is ordered and when it’s ordered to ensure that the best and freshest ingredients are used every day.  He also takes pride in being part of the development of menu concepts and ideas, as well as defining specialty dishes. Michael says, “I take no greater sense of accomplishment than in making sure that our customers leave the restaurant delighted and not being able to wait to tell everyone about Procaccini’s”.
